We’re taking a quick break from the camping, quite literally, right now. Both virtually with this chicken dinner pizza, and physically because we’re at a Starbucks, enjoying some caffeine and free wifi. Mike’s busy catching up on work that he’s been desperately needing to do and I’m just catching up on the internets. Camp life sure is good for unwinding and strengthening our relationship, but maybe not so much for making money/productivity?

Speaking of productivity, if you’ve been too productive and have no idea what to make for dinner, maybe you’ll give this chicken dinner pizza a try? It’s awesome, especially if you actually had a chicken dinner the night before. I’m all about turning leftovers into bestovers and this pizza was pretty awesome.

Mike and I have a mutual love affair with with roasted chickens. When we first started dating, but weren’t really serious, he took me on a birthday picnic on a mountain. There wasn’t a picnic basket – instead there was a plastic grocery bag with a rotisserie chicken, potato salad and a baguette. Ever since then rotisserie chickens give me all the feels. We don’t always buy them on the regular, but when we do, we like to be super animal about it and just dig in, no utensils, kind of like how we did on that picnic oh so many years ago.

I don’t know why grocery store rotisserie chickens have a bad reputation, but to be honest, sometimes they’re just what you need. And, if you’re ever in France, they have amazing rotisseries that sell the most succulent, juicy chickens ever. So there’s no shame in rotisserie chickens. Because if the French do it, it’s totally okay! So, buy yourself a rotisserie chicken, have a delicious meal, and the next day, pop the leftovers on a pizza. Trust me, you won’t regret it. Especially if there’s ranch for dipping!

  • 1 ball pizza dough
  • ranch dressing, to taste
  • 1 cup shredded mozzarella
  • 1 cup cooked shredded chicken
  • 1/2 cup baby roasted potatoes
  • 1/4 cup blanched green beans
  • salt and freshly ground pepper, to taste
  • jalapeño ranch, to dip, if desired

Arrange a rack in middle of oven and preheat to its hottest setting, 500°F–550°F.
Lightly oil a cast iron pan or baking sheet. Shape dough pushing gently until fairly thin. Spread on a thin layer of ranch dressing and top with shredded mozzarella, cooked chicken, roasted potatoes, and green beans. Season with salt and freshly ground pepper. Place in the oven to bake for 12-15 minutes, or until the crust is puffy, crisp and slightly blistered. Slice and enjoy hot with jalapeño ranch, if desired!

Sunday Brunch with BAE: Bacon Avocado Egg Sandwich I’m a huge fan of breakfast sandwiches, not that I actually eat them at breakfast. I actually fail at adulting because I don’t do breakfast, except for coffee and sometimes medium-soft boiled eggs.
